The Blockman ageing process is where science meets tradition. We use two primary methods: Dry Ageing and Wet Ageing, both executed with precision to maximise flavour and tenderness.
Dry Ageing: Our dry-aged cuts are matured in a controlled environment where humidity and temperature are meticulously managed. This process enhances the meat’s bold, nutty, and earthy flavours while allowing natural enzymes to tenderise the beef. Expect a robust, complex taste with every bite.
Wet Ageing: For those who prefer a juicier, more natural beef flavour, our wet-aged cuts are sealed and matured in their natural juices. This method preserves the moisture while enhancing the meat’s inherent richness, resulting in a succulent and tender steak.
Every cut at The Blockman is aged in-house for a minimum of 28 days, ensuring that each piece reaches its full potential before it arrives at your table.
